This looks like the Google Earth logo from 2017, but shaped like a shield.

Idk why Microsoft decided to do this. After all, defender was NEVER an office app to begin with, so I don't see the point. I guess if they're going to change ALL the Microsoft app logos to have this new style, it would sorta make sense? Still, though, I have no idea what their plan is.
